Panipopo!

Panipopo is a popular Hawaiian dessert; it is a sweet roll with a coconut cream on the bottom. I hate coconut BUT I love this dessert!

Ingredients:
1 Package (bridgeford) frozen bread dough (thawed)
2 cans of coconut milk
1 can of cream of coconut
1tsp coconut extract (optional)

Directions:
Knead dough and make them into dough balls. Place dough in a 12x16 inch pan. Let the dough rise for 1 1/2 to 2 hours. (or until the dough has doubled in size). Mix coconut milk, cream of coconut, and coconut extract. Carefully pour the coconut mixture into the pan, after the rolls have risen. Preheat oven to 350 degrees. Bake for 15-20 minutes (until they are slightly golden brown), then place foil on top of the rolls and continue baking for 30-35 more minutes (depending on pan size). Remove and set to cool.

Note:
1 Loaf makes about 7 or 8 individual rolls depending on size of desired rolls. 1 package (3 loaves) makes 1 12x16 inch aluminum pan (20 large rolls or 24 slightly smaller sized rolls.)

It is an easy but time consuming dessert to make but it is worth the time! They are so incredibly delicious!
