Easy Creamy Potato Soup

Creamy Potato Soup
Ingredients
- 8 cups chicken broth
- 8 cups of peeled and cubed potatoes
- 16 oz cream cheese
- 4 cloves of garlic (we used garlic powder to taste)
- 1/2 of a small onion minced
- 1 teaspoon seasoned salt
- 1 teaspoon paprika
- 1/2 teaspoon white pepper
- 1/2 teaspoon ground red pepper (if you like your soup on the spicy side. I omitted this ingredient)
- Combine broth, potatoes, garlic, onion, and spices.
- Boil on medium heat until potatoes are tender.
- Smash a few of the potatoes to release their starch for thickening.
- Reduce to low heat and add cream cheese. Heat stirring frequently, until cheese melts.
Now the soup will not be chunky unless you remove the potatoes and put them back in after the cream cheese melts.
We also had shredded cheddar cheese, chopped green onions, and crumbled bacon to top the soup with.
The soup was a huge hit! And was so easy to make the prep only took about 20/30 minutes and the cook time was about the same. It is an easy one pot dinner!
We also had some frozen bread dough and made some "homemade" loaf of bread!
