Jalapeno Jelly

Image
Now the chicken flautas would not be so amazing with out Chevy's Jalapeno Jelly! This stuff is AMAZING! Now even if you dont like spicy food like me this jelly is not spicy at all! in fact it is probably one of favorite things in the entire world! It is incredibly versatile I use it on the flautas of course, on cream cheese with chips, or even on nachos! seriously this stuff is amazing! Now that I have discovered this and made a few batches I will definitely be getting my pectin in bulk on Amazon! Here is the link! Certo Premium Liquid Fruit Pectin by Sure-Jell, 6 Ounce Box (Pack of 4) And here is the recipe! Chevy's Jalapeno Jelly Copycat Recipe 3/4 cup chopped red bell peppers 3/4 cup chopped green bell peppers 1/3 cup diced and seeded jalapeno's peppers (you don’t have to but I use gloves when dealing with hot peppers to avoid accidently getting anything in my eyes or mouth) 2 3/4 cups sugar 1/2 cup red wine vinegar 1 tablespoon freshly squeezed lime jui

The BEST Chicken Flautas

Image
If you haven't ever been to Chevy's Fresh Mex Restaurant then you are truly missing out. They have some seriously delicious Mexican food! my personal favorite is their chicken Flautas! I have found and a dapted a recipe for these that I have now made at least five times! I am addicted! The first time that I made them I made a single batch and it was not enough so I have now decided that each time I make them I will be making a double if not triple batch! They are way easier to make then you would think, the are usually fried in the restaurant BUT I hate deep frying anything in my house because of the small and the clean up. Because of that I bake them and they are much better this way! (in my personal opinion of course!) You could also adapt this yourself if you wanted to by using other types of meat or maybe even making the vegetarian if you choose! The recipe calls for salsa and if you wanted to get really creative you could make your own and use that instead of jarred sals

Panipopo!

Image
Panipopo is a popular Hawaiian dessert; it is a sweet roll with a coconut cream on the bottom. I hate coconut BUT I love this dessert! Ingredients: 1 Package (bridgeford) frozen bread dough (thawed) 2 cans of coconut milk 1 can of cream of coconut 1tsp coconut extract (optional) Directions: Knead dough and make them into dough balls. Place dough in a 12x16 inch pan. Let the dough rise for 1 1/2 to 2 hours. (or until the dough has doubled in size). Mix coconut milk, cream of coconut, and coconut extract. Carefully pour the coconut mixture into the pan, after the rolls have risen. Preheat oven to 350 degrees. Bake for 15-20 minutes (until they are slightly golden brown), then place foil on top of the rolls and continue baking for 30-35 more minutes (depending on pan size). Remove and set to cool. Note: 1 Loaf makes about 7 or 8 individual rolls depending on size of desired rolls. 1 package (3 loaves) makes 1 12x16 inch aluminum pan (20 large rolls or 24 slightly smaller sized

Oven Sliders

Image
These little sliders have become a staple in my house; they are so easy to make and so yummy! You can add a variety of things to them to make them different and they are great for using up left overs! We had pulled pork one night and after 2 days of pulled pork and rice we just couldn't eat it any more SO we put the pork into these sliders! I also use ham and turkey lunch meat in these because we always have that on hand and this is such a quick and easy dinner recipe. It is also a game day favorite because it is so easy to make in bulk and they can be quite filling! Oven Sliders Ingredients: 1 stick of butter (I use less it all just depends on how much sauce you want) 1 1/2 tablespoons Mustard 1 1/2 teaspoons Worcestershire 1 1/2 teaspoons minced onion Your choice of meat Your choice of sliced cheese (I like white cheeses) Your choice of rolls (I always use kings Hawaiian but I have also used dinner rolls) Directions: Slice rolls and place the bottoms in a 13x9 pan

Easy Creamy Potato Soup

Image
Sitting in the car on the way home from the mall to find an Easter dress for my daughter my mom started talking about wanting to find an easy soup recipe. Well I just happened to have one in my recipe book. I hadn't tried it before but everyone that had tried it online said it rivaled Panera's potato soup! SO we decided to give it a try! Creamy Potato Soup Ingredients 8 cups chicken broth 8 cups of peeled and cubed potatoes 16 oz cream cheese 4 cloves of garlic (we used garlic powder to taste) 1/2 of a small onion minced 1 teaspoon seasoned salt 1 teaspoon paprika 1/2 teaspoon white pepper 1/2 teaspoon ground red pepper (if you like your soup on the spicy side. I omitted this ingredient) Directions Combine broth, potatoes, garlic, onion, and spices. Boil on medium heat until potatoes are tender. Smash a few of the potatoes to release their starch for thickening. Reduce to low heat and add cream cheese. Heat stirring frequently, until cheese melts. Notes:

How do I stay organized???

Image
So as a stay at home mom with a two-year-old and a new baby on the way how do I keep myself organized? Truthfully as hard as I try I am still perfecting my organization skills... I have my amazing planner with my monthly and weekly planner, as well as a to do list, meal planner, and a chore check list. I fill it out every Sunday and try to stick with my plans to the best of my ability, but life can get in the way. As long as I can get dinner on the table, keep my daughter from breaking anything or getting hurt I count my day a success! Well let me tell me about my wonderful planner! I swear by this thing; it really does help me keep my week organized. I love knowing that I don't have to worry about what my meals are going to be two hours before dinner time because I have it planned the week ahead. This helps me with my Monday morning grocery shopping and my Monday afternoon meal preps! My chore list, and to-do list is really when I have time to get to it during the week is whe
